Honey Blackened Pork Tenderloin
1 each Pork Tenderloin whole - about 2 pounds
honey
blackening seasoning
hot water
1. Mix honey, blackening seasoning and water together.
2. Coat tenderloin with mixture and marinate for one to two hours turning occasionally.
3. Heat iron skillet to white hot. Place tender loin in skillet and blacken on all sides. A small tenderloin will be rare when finished.
4. Put tenderloin, skillet and all in oven until desired temp.
5. Remove and let rest for 5 or 10 minutes. On a bias, slice into portions as desired. May cut into small medallions for appetizers or large cuts for dinner portions.
